My knee Is so much worse in the evenings, its kind of ok when I wake up, and I am resting it, but I'm able to do things like make a simple meal or use the bathroom e.t.c. but by this time at night...

^ Probably Oatly -Full cream or Batista edition ( though its also the most expensive. ). Cashew is quite a nice creamy one, but some generic ones can be a bit naff.
