I'm not sure if there's a clear difference, but stews are usually slow cooked. Or ours are, at least. With casseroles we usually make a roux first, and add that. Though you can also do that with stews too
I associate stew more with beef or lamb, and casserole with things like chicken, though that's probably not set in stone either.
