Ok, here's my mum's friend Sue's cheesecake recipe - I like it cos it's something anyone could make & doesn't need any fancy stuff to make it (and is easy to vary - my mum prefers to use gingernut biccies for the base & make a tropical fruit filling)

(sorry about the vague quantities)

You need:
Chocolate digestives (usually about half a pack)
melted butter

filling:
1 normal sized tub philadelphia cheese
1 medium sized pot of double cream
1 mutipack of cadbury's choccy flakes (3 or 4 if bought individually)
1 tsp vanilla essence
sugar to taste (caster is best, but granulated works fine too)

1- grease cake tin/flan dish
2- break up enough choccy digestives to cover the bottom of tin/dish into crumbs using rolling pin or food processor, mix with melted butter, press into tin/dish & put in fridge to chill
3- whip whole pot of cream until stiff & can stand on its own
4- add cheese, vanilla, sugar & crumble all of the flakes but one into the mixture. Beat mixture until everything is combined & nice & fluffy
5- spread cheesy mixture onto the base using a spatula & smooth it down.
6- crumble remaining flake on top & leave to chill for at least an hour

It is! And it's so nice it can be used for a special occasion or just as a random treat! (although for a random treat it's hard to beat homemade brownies!)

I find cooking very relaxing - and oddly enough, washing up - not that I'm volunteering to do anyone elses

Does anyone use a slow cooker ? And have any recipe ideas for that ? I bought one recently and have been experimenting with it. It cooks meat brilliantly. But I've only used it so far with pre-made curry sauces.

I do my spag-bol sauces in the slow-cooker Hartley, it's perfect for that kind of thing, but takes a bit of forward planning. Did you choose your name from Pipkins btw?

Well done btw Befals, it sounds like you have a natural 'feel' for cooking

This is not really a recipe. i love chips but they are obviously unhealthy. so tonight i tried cutting small potatoes into 4 lengthways and microwaving them for 10 mins. Then grilled them for a few minutes to crisp up. They turned out a lot better than i thought they would. and no fat was used. May be worth trying for chip lovers.

Ooo, nice thread! I've just started learning how to cook. Well, it's a wee bit difficult at the moment with exams and all; y'know, some recipes take up quite a bit of time and it just seems like a bit of a hassle. But when they're all done I hope to start "properly" learning to cook. :p

Anyway. Here's a yummy lentil bolognese sauce:

1 onion, chopped
2 garlic cloves, crushed
2 carrots coarsley grated
2 celery sticks, chopped
3 tbsp olive oil
4oz red lentils
1 x 400g can chopped tomatoes
2 tbsp tomato puree
2 cups stock

In a large saucepan, gently fry the onion, garlic, carrots and celery in the oil for about 5 minutes, until they are soft.

Add the lentils, tomatoes, tomato puree and stock.

Bring mixture to the boil then partially cover with a lid and simmer for 20 minutes until thick and soft. Use the bolognese as required.

Lovely with pasta :D

ooh, I had a real baking day yesterday! I made lemon cake, coffee & walnut cake & cinnamon-nutella cake. And I made triple choccy muffins today - yay! I looooooove baking
