Just made a recipe from a healthy eating booklet I was given.

Wholemeal pasta, then added to that was chicken bits fried with Rosemary and a home made pesto of kale, toasted cashew nuts, lil bit of olive oil, veg stock, and Parmesan blitzed in food processor and all mixed through pasta with some lemon zest.

I was deeply sceptical but I've got to say was really tasty. Not sure really needed the chicken but it bumps the protein I guess.

^ There's a van on Ely market that does Mexican food. So you chose what you want - burrito, taco, quesadilla etc and what filling. One of them is nopales which is cactus. It's got all the usual burrito filling of rice and beans plus you can add cheese, salsa, sour cream. Cactus was a similar texture to spinach only plumper and wetter. A bit like when you overboil cabbage. I didn't get much of a flavour from it but I had salsa verde in mine so it masked it.

I also had some fried plantain today which was tasty.

You suspected correctly then, and yes the salmon does look a bit .. crap - it certainly had more colour to it than that. I couldn't be arsed to fanny around though cos i had an appetite to contend with

Aw no, we all have to settle for nothing to write home about every now and then .... don't make me feel bad for my delishishness! Haha, yeah 'country vegetable' - wtf is that about!

I had some kung pao bean curd with mushroom fried rice from the local chinese takeaway. The rice was OK, the bean curd was a bit iffy. What even is bean curd anyway?

have you ever tried huel? i've been using it for well over a year, its really good for something i can just grab on a tea break at work and get some nutritional value from, rather than just eating gross shit from the vending machine

aw yeah i'm all over that batch cooking. it actually saves an insane amount of time as well. if i make a huge chilli that will make like 12 portions, thats maybe 6 trips to the supermarket for all the stuff i wont make, and 6 times i wont have to wash up etc.

my dieting is going really well tbh, i was just eating too much because i was stressed. now thats out the way i'm killing it. just trying to get my weight down because i'm gonna do a 10 mile run later in the year ^-^

i'll need to look into trying soylent, although ive gotten pretty good at pimping my huel
