Yeah, beans are cheap. But non-meat diets do have their health drawbacks so does that impact on health then have an impact on environment as you presumably use more resources due to your ill health?...

I meant high earners in the general sense, such as people earning a wage, rather than billionaires.

I don't think there's much you can do to pay less tax if you're earning £200,000 or less.
